Flagship Specialty Foods & Fish Market is the natural culmination of Leslie Sorensen’s culinary and hospitality focus of her university studies, her work experiences in the food industry, as well as her family roots in beautiful Harbor Country. Located in the heart of our little Midwestern paradise on the shores of Lake Michigan, Flagship serves both our beloved local full-time residents as well as the visitors to the area which are so important to our local economy.

Study and Passion
Leslie Sorensen has alway been passionate about creating beautiful delicious food and creating wonderful experiences around it. She studied Culinary Arts at Kendall College and Hospitality Management at Harold Washington College in Chicago. Leslie started her career in Chicago and then Seattle, holding a wide range of positions and extending her expertise in the foodservice arena.

Local Family Business
Leslie’s family runs the wonderful Animal Hospital in New Buffalo. She returned to help out when they needed it. As business eased, Leslie naturally did what she does best. She created a breakfast buffet on Saturdays for clients. It became so popular that clients started scheduling their appointments around Leslie’s brunch.
Catering Services
Since the start of her professional career, Leslie has always offered catering services on the side. She brings in all aspects of her experiences, studies, and management skills into her catering services. Her floral shop experience perfectly pairs and allows one-stop-shop catering services that include gorgeous floral arrangements and great food for your special event.
Flagship Serendipity
As stories like this go… the original chef/owner of Flagship, Rachel Collins, is a client of Sorensen’s New Buffalo Animal Hospital. While visiting, Rachel chatted about the business being up for sale. Dr. Ben suggested she call his sister, Leslie. The rest is history. Leslie has been gifted Rachel’s guidance and recipes during the re-opening in Spring 2026. Leslie will maintain the freshness, quality, and traditions your favorite fish market is known for.
Our parties are always a huge success thanks the Flagship team. We typically call the shop to order two-weeks in advance. I try to keep an open mind for menu options because the staff enthusiastically makes seasonal recommendations and fills you in on the large selection of ever-changing special fresh fish, shellfish, and smoked fish... that Flagship can procure in such a short window. Placing your catering order is easy and lots of fun. You will not be disappointed.
