Flagship Specialty Foods & Fish Market is the natural culmination of Rachel Collins’ varied career in the food industry, as well as her roots in the family restaurant business. Rachel has been a Harbor Country® resident for over 20 years and feels that what Flagship brings to the area is the perfect fit! Located in the heart of our little Midwestern paradise on the shores of Lake Michigan, Flagship will be a year-round enterprise to serve both our beloved local full-time residents as well as the visitors to the area which are so important to our local economy.

Meet Owner /Chef /Entrepreneur —Rachel Collins

The Family Restaurant
Rachel Collins grew up in her family’s restaurant in rural Northwest Illinois. There, she and her family were immersed in their Northern Italian heritage of making savory, satisfying and healthy food from scratch at home.

Hunting & Gathering
Rachel’s family were also avid wild food foragers, gardeners, and fishers. This last pursuit led to Rachel spending over 20 years in the caviar industry creating a nationally known product, brand and iconoclastic American Caviar line.

The Art of Fine Cuisine
It is not surprising that Rachel has become a gourmet chef along the way. She worked
as a professional chef in restaurants over the years, as well as having provided catering services with her team and in tandem with many renowned chefs.

Always passionate about food, her range of knowledge has grown through both research and practice. Focusing on high-quality and exquisitely delicious cuisine remains her raison d’etre, and first concern. Please stop by and say hello.
